Right here in the heart of Albuquerque, tucked inside the Cottonwood Mall food court, there's a taste of Kathmandu waiting for you. If you haven't tried a Nepali Momo yet, you're in for one of the best comfort foods this city has to offer; and if you already know and love them, you know exactly why we're so excited to bring them to your neighborhood.
Few things are as intrinsic to the daily life of a Nepali person as the Momo. Whether it's bustling street-side eateries in Kathmandu or family-run restaurants and cafes across the country, these tasty little dumplings are the pride of Nepal. Steamed to perfection with fragrant, flavorful fillings, the humble Momo is a comfort food staple and now, it's an Albuquerque staple too.
At Fresh Fusion, we lovingly prepare these Nepali classics with fresh ingredients, homemade wrappers, and house-made achar, right here for our Albuquerque neighbors to enjoy.
What Is a Nepali Momo?
Momo is a staple of Nepali cuisine that consists of a thin flour wrapper filled with a savory mixture and traditionally steamed to perfection.
Though they are now a staple of Nepali cuisine, Momo actually have their roots in the Himalayan regions. Food historians generally attribute their invention to the Tibetan people. Through centuries of cultural and trade connections between the Kathmandu Valley and Tibet, Momo became established in the Valley and were embraced by the Newar community before spreading throughout Nepal.
Today, Momo are a ubiquitous favorite across Nepal and can be found in a variety of preparations; steamed, fried, or in a spicy broth, with an equally diverse range of fillings and accompanying achar.
A true Momo should have delicate, almost paper-thin wrappers, tender and juicy fillings, and plenty of savory, comforting flavor. That's exactly the standard we hold ourselves to, every single day, for the Albuquerque community.
A Taste of Kathmandu: What Makes Nepali Momo Special?
As mentioned, a Momo consists of three main elements: the delicate wrappers, the juicy and flavorful filling, and the spicy achar that usually accompanies it.
The filling is usually a mixture of minced meat mixed with spices, scallions, and ginger. At Fresh Fusion, our Nepali-style Momo are made with freshly minced chicken, ginger, garlic, scallions, cilantro, and a blend of spices.
We let the natural goodness of the ingredients shine through, without making the filling overpoweringly spicy; perfect for Albuquerque taste buds discovering Nepali flavors for the first time, and satisfying for anyone who already craves the real thing.
The filling is wrapped in delicate, almost translucent dough and carefully steamed to achieve that wonderful tenderness.
A well-steamed Momo should feel soft and tender on the outside, with a juicy and flavorful filling inside. When served fresh, the dumpling should be hot, delicate, and satisfying with every bite.
The Magic of Hand-Made Wrappers and Fillings
A good Momo filling has to be carefully prepared to be juicy and flavorful enough while being firm enough not to fall apart upon steaming.
The wrappers have to be thin enough to be delicate but sturdy enough to hold the delicious filling and its juices. Most importantly, the dumplings need to be steamed fresh to retain their tenderness.
The process is a careful balancing act, and any deviation results in a less-than-perfect Momo. That is why we prepare our momo fresh, every day, using time-tested techniques — right here in Albuquerque, so you never have to wonder how fresh your food is.
At Fresh Fusion, we use:
- Flavorful chicken filling — We prepare our chicken mince and carefully combine it with fresh herbs and spices to achieve a perfect umami-rich flavor.
- Hand-folded Momo — Unlike many commercial Momo-makers, we carefully hand-fold each dumpling to achieve consistency and perfection.
- Steamed fresh — We steam the Momo fresh to ensure that the wrapper remains tender and the filling juicy.
This is why we recommend you swing by and enjoy your Momos while they're hot; and we certainly have plenty of those waiting for you.
The Secret to a Perfect Momo Is in the Achar That Accompanies It
Few things in life are as Nepali as a perfectly steamed Momo served with a flavorful, spicy achar.
Nepali achar varies in spice, flavor, and preparation, with some being fiery and others milder with a distinctive nuttiness or sourness.
We bring two house-made achars to the table when you order our Momos. One of them is our fiery red chili achar, made with; you guessed it; red chilies.
It's a glorious mix of chopped tomatoes, garlic, red chilies, and vinegar that imparts a fiery kick to the Momos, contrasting their rich, savory umami taste. We recommend trying a few Momos with a dollop of the red chili achar, as it can be quite fiery for those unaccustomed to it, and then trying them on their own.
Our other achar is equally special, but in a different way. Roasted sesame is another house specialty of ours that provides a wonderful, nutty flavor. It's the perfect accompaniment to the fiery red chili achar. If the red chili is too spicy for you, try the other one instead.
Want to try the dish on its own merits, without the achar? You can, of course, but we cannot vouch for how wonderful your dining experience will be without it.
A Spicy, Flavorful Nepali Classic That Has Come a Long Way
While a simple dish on the surface, the momo has seen a variety of regional adaptations across Nepal. From its classic incarnation as a steamed dumpling to its fiery deep-fried cousins, the diversity of momo-based dishes in Nepal is astonishing.
Traditional Nepali momos are filled with minced meat, but vegetarian varieties can be found as well. The dish has also entered the popular consciousness as both a street food staple and a comfort home meal.
It's the taste of Kathmandu Valley that has traveled far and wide, and now it's found a home right here in Albuquerque, with us at Fresh Fusion.
